Cheesy Carrot Oats Slices

What is needed:
A
1 cup self-raising flour ~ tepung naik sendiri

1 teaspoon cinnamon powder ~ serbuk kayu manis

1/2 cup  oats 
1/2 cup  chocolate chips
1/2 cup grated carrot - disagat
1/3 cup sugar
100gm butter
1 egg
1/2 cup natural yogurt 
1 tsp essence vanilla

Frosting:  
125gm  mascopone cheese or cream cheese
1/4 sifted icing sugar ~ gula ising diayak
2 tbsp natural yogurt
2 tbsp lemon juice
1 tbsp lemn rind ~ kulit lemon



Make It

  1. Sift together ingredients A; blend in  Oat, chocolate chips and grated carrot; set aside.
  2. Cream butter and sugar until well mix; add in egg and vanilla.
  3. Fold in dry ingredients alternately with Yogurt.
  4. Spoon mixture into 9in x 9in pan lined with aluminium; press evenly.
  5. Bake in preheated 180°C oven for 30-45 minutes or until lightly browned; cool.
  6. Meanwhile beat frosting ingredients until creamy and spread on cool base. Cut into slices and serve.

Squid &Thai basil

ingredients

  • 2 tbsp vegetable oil ~ minyak sayur
  • 3 garlic cloves, finely chopped ~bawang putih
  • 1cm piece fresh ginger, finely chopped~halia
  • 3-6 bird’s eye chillies, chopped~cili padi
  • 1kg squid, cleaned, gutted, scored and cut into thick strips ~sotong
  • 3 tbsp Thai fish sauce ~ sos ikan
  • 1/2 tsp sugar~gula
  • Juice of 2 limes ~ jus limau
  • Bunch of spring onions, trimmed and finely sliced on the diagonal~daun bawang potong serong
  • Good handful of whole fresh Thai basil leaves~or use tarragon if you can't find basil ~ segenggam daun selasih Thai
  • 1 big bomby onion- sliced the way you want.~bawang besar potong ikut suka

Way to cook:


1. Heat the oil in a wok or wide-bottomed frying pan. As soon as it is smoking hot, add the garlic, ginger and chillies. Stir-fry for 30 seconds, then add the squid pieces. Stir-fry for another 30 seconds, then add the fish sauce, sugar, lime juice spring onions and bombay onion. Just ‘show’ these last ingredients the heat, then stir a few times and remove from the heat.
2. Stir in the basil leaves and serve. This is great with rice and something cooling, such as wedges of cucumber.
