Almond Crunchy



Bahan A:
120gm serbuk badam
180gm tepung biskut
120gm gula kastor
1 sudu kecil serbuk penaik
1 sudu kecil soda bicarbonat

Bahan B:
1 biji kuning telur
1/4 sudu kecil garam halus

Bahan C:
160-180 mil minyak jagung
  
Bahan D: - untuk sapu pada loyang pembakar
1 biji telur
1 sudu besar susu cair

Bahan E: - hiasan
coklat masak
badam


Cara membuatnya:
Serbuk badam, tepung, serbuk penaik  disatukan. 
Masukkan gula gaul dan putar kelajuan perlahan 1 minit.
Masukkan kuning telur, garam dan minyak jagung dan
putar lagi hingga menghasilkan doh.
Canai dan terap dengan acuan.
Sapu loyang dengan bahan D.  Susun adunan dan bakar
hingga garing 165 darjah celsius.
Pastikan biskut sejuk sebelum di hias.

Chicken with lemon sauce



Ingredients:
8 chicken breast halves, deboned and cut into bite size pieces
1/2 cup cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup water
4 egg yolks, beaten
2 cups Cooking Oil
Green onions, sliced
***Lemon Sauce***
1 1/2 cup water
1/2 cup lemon juice
3 1/2 tablespoons light brown sugar
3 tablespoons cornstarch
3 tablespoons honey
2 teaspoons chicken bouillon granules
1/4 teaspoon ginger, or more if desired

Directions:
Combine cornstarch, salt and pepper. Blend in water and egg yolks. Dip chicken pieces into cornstarch-egg mixture. Fry chicken in oil for about 5 minutes until golden. Drain. Sprinkle with green onions. Pour sauce over chicken.

For the sauce: Combine all the ingredients in a saucepan. Cook over medium heat, stirring, about 5 minutes until sauce boils. Pour over chicken. This recipe also works well in a wok.


Kek Mentega Fusion

Resipi kek mentega lama tersimpan,  arwah mak kalau buat  kek pasti guna pure butter untuk dapatkan kek yang lazat.

Bahan-bahan:
250 gm mentega 
200 gm gula halus
6 biji telur 

1 sudu teh  vanilla essence
300gm self-raising flour (ayak)
1/2 - 3/4 cawan susu cair (evaporated) atau fresh milk



Cara membuat:
Pukul mentega dengan gula hingga kembang. Masuk telur satu persatu, kacau dan masukkan esen vanilla dan susu gaul rata.
Akhir sekali masukkan tepung dan kacau sebentar.   
Tuang dalam acuan dan bakar dalam ketuhar 1600
hingga masak kira-kira 1 jam.


kalau nak  marble effect, ambil satu senduk besar aduan dan ayakkan 3 sudu makan serbuk koko, kacau rata,  kemudian masukkan selang-seli  dengan warna asal dalam acaun sebelum dibakar.

Masuk perahan jus daripada 1 biji oren untuk mendapatkan rasa berlainan.

Alcohol Substitutions Chart

 

 Amaretto

Substitute - General
Non-alcoholic almond extract or marzipan.

Applejack or apple brandy

Substitute - General
Unsweetened apple juice concentrate; apple juice; apple cider; or apple butter.

Apricot brandy

Syrup from canned apricots in heavy syrup; or apricot preserves.

Beer or Ale

Substitute - General
Chicken broth, white grape juice, or ginger ale

Bourbon

Substitute - General
Non-alcoholic vanilla extract. Champagne and other sparkling wines: Sparkling apple cider; sparkling cranberry juice; or sparkling grape juice.

Brandy

Kirsch (Cherry)

Syrup or juice from black cherries, raspberries, boysenberries, currants, grapes or cherry cider.

Licorice or anise flavored liqueur

Mirin

White grape juice mixed with lemon juice or zest.

Muscat

Orange liqueur (Grand Marnier) or brandy

Unsweetened orange juice concentrate; orange zest; orange juice; or marmalade.

Peach brandy

Sherry

Substitute - GeneralApple cider; non-alcoholic vanilla extract; coffee; or coffee syrup.
Substitute - Measured2 tablespoons sherry, substitute the following: 1 to 2 teaspoons vanilla extract or 2 tablespoons orange or pineapple juice.
To substitute sherry in a marinade: for 1/2 cup sherry use 1/4 cup vinegar + 1 tablespoon sugar + 1/4 water OR1 tablespoon vinegar, plus chicken stock or water to make 1/2 cup.

Vermouth

Substitute - GeneralApple cider; or apple juice mixed with lemon juice and water.

Vodka

Wine, White, Dry

Substitute - GeneralWater, chicken broth, bullion or consommé, ginger ale, white grape juice, diluted cider vinegar or white wine vinegar, liquid from canned mushrooms.

Wine, Heavy

Substitute - GeneralFor 1/4 cup or more port, sweet sherry, rum, brandy, liqueur, substitute the following: equal measure of unsweetened orange juice or apple juice plus 1 teaspoon of corresponding flavored extract or vanilla extract.

Cheesy Carrot Oats Slices

What is needed:
A
1 cup self-raising flour ~ tepung naik sendiri

1 teaspoon cinnamon powder ~ serbuk kayu manis

1/2 cup  oats 
1/2 cup  chocolate chips
1/2 cup grated carrot - disagat
1/3 cup sugar
100gm butter
1 egg
1/2 cup natural yogurt 
1 tsp essence vanilla

Frosting:  
125gm  mascopone cheese or cream cheese
1/4 sifted icing sugar ~ gula ising diayak
2 tbsp natural yogurt
2 tbsp lemon juice
1 tbsp lemn rind ~ kulit lemon



Make It

  1. Sift together ingredients A; blend in  Oat, chocolate chips and grated carrot; set aside.
  2. Cream butter and sugar until well mix; add in egg and vanilla.
  3. Fold in dry ingredients alternately with Yogurt.
  4. Spoon mixture into 9in x 9in pan lined with aluminium; press evenly.
  5. Bake in preheated 180°C oven for 30-45 minutes or until lightly browned; cool.
  6. Meanwhile beat frosting ingredients until creamy and spread on cool base. Cut into slices and serve.

Squid &Thai basil

ingredients

  • 2 tbsp vegetable oil ~ minyak sayur
  • 3 garlic cloves, finely chopped ~bawang putih
  • 1cm piece fresh ginger, finely chopped~halia
  • 3-6 bird’s eye chillies, chopped~cili padi
  • 1kg squid, cleaned, gutted, scored and cut into thick strips ~sotong
  • 3 tbsp Thai fish sauce ~ sos ikan
  • 1/2 tsp sugar~gula
  • Juice of 2 limes ~ jus limau
  • Bunch of spring onions, trimmed and finely sliced on the diagonal~daun bawang potong serong
  • Good handful of whole fresh Thai basil leaves~or use tarragon if you can't find basil ~ segenggam daun selasih Thai
  • 1 big bomby onion- sliced the way you want.~bawang besar potong ikut suka

Way to cook:


1. Heat the oil in a wok or wide-bottomed frying pan. As soon as it is smoking hot, add the garlic, ginger and chillies. Stir-fry for 30 seconds, then add the squid pieces. Stir-fry for another 30 seconds, then add the fish sauce, sugar, lime juice spring onions and bombay onion. Just ‘show’ these last ingredients the heat, then stir a few times and remove from the heat.
2. Stir in the basil leaves and serve. This is great with rice and something cooling, such as wedges of cucumber.
