Onion Rings Panggang



Ingredients
¼ cup all-purpose flour
¼ tsp black pepper
¼ tsp cayenne- serbuk cili
salt to taste

1 cup plain yogurt- tairu
2 eggs
½ cup plus 2 tbsp all-purpose flour

4 cups finely crushed potato chips or cornflakes or breadcrumb
2 large onions

3 tblsp vegetable oil

salt to sprinkle


What to Do:

Preheat the oven to 200 celsius.
In a large bowl, combine 1/4 cup (35 grams) flour, 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp cayenne.  

In another medium bowl, combine the yogurt, eggs and 1/2 cup (70 grams) plus 2 tbsp flour. Whisk until a smooth batter is formed.

Crush all the chips or bread crumbs  finely and place them in a bowl. 
Peel the onions and cut them into 1/2 inch (1 cm) rings.

Cover a baking sheet with a piece of parchment. Drizzle with 3 tbsp vegetable oil, then pop it into the hot oven for 8 minutes – or until the oil just starts to smoke.
In the meantime, toss the onion rings in the flour mixture.
Dip each ring into the batter.  Let the excess batter dribble off a little.

Place the rings on the hot baking sheet and bake for 8 minutes, then flip each ring over before baking for another 8 minutes.
Since you will probably have more rings than you can fit in one baking sheet you might need to work in batches.
Sprinkle with salt while the rings are still hot. Serve with your favorite dipping sauce.

Cheesy Carrot Oats Slices

What is needed:
A
1 cup self-raising flour ~ tepung naik sendiri

1 teaspoon cinnamon powder ~ serbuk kayu manis

1/2 cup  oats 
1/2 cup  chocolate chips
1/2 cup grated carrot - disagat
1/3 cup sugar
100gm butter
1 egg
1/2 cup natural yogurt 
1 tsp essence vanilla

Frosting:  
125gm  mascopone cheese or cream cheese
1/4 sifted icing sugar ~ gula ising diayak
2 tbsp natural yogurt
2 tbsp lemon juice
1 tbsp lemn rind ~ kulit lemon



Make It

  1. Sift together ingredients A; blend in  Oat, chocolate chips and grated carrot; set aside.
  2. Cream butter and sugar until well mix; add in egg and vanilla.
  3. Fold in dry ingredients alternately with Yogurt.
  4. Spoon mixture into 9in x 9in pan lined with aluminium; press evenly.
  5. Bake in preheated 180°C oven for 30-45 minutes or until lightly browned; cool.
  6. Meanwhile beat frosting ingredients until creamy and spread on cool base. Cut into slices and serve.

Chocolate Mousse

This dessert is  simple to make. It´s silky smooth with the right balance of bitter and sweet. It is served on a crunchy, nutty brownie-like base which gives contrast to the velvety smooth mousse. This recipe serves four.
*Recipe from Chalet´s Chef Jochen Kern´s recent Malaysia International Gourmet Festival menu. 



Ingredients:
60g egg yolks
60g eggs (with whites this time)
188g dark chocolate
44g sugar
a pinch of instant coffee
16g gelatine powder
2.4 litres whipping cream 

Method:
Whisk all the eggs and sugar until fluffy.
Melt the dark chocolate.
Melt the gelatine powder.
Whip the cream.
Add melted chocolate into the fluffy egg mix.
Fold in melted gelatine.
Next, fold in whipped cream. When all is well mixed, chill, then serve in little coffee cups or bowls.

Roti Pretzel

This Soft pretzel recipe the dough can be made in a bread machine. 
Resipi ni dapat  16 biji pretzels

Bahan-Bahan:
1 1/4 cawan air
3 1/2 cawan tepung roti 
1 sudu teh garam
1 biji kuning telur
1 sudu makan minyak zaiton
1 sudu makan jus lemon 
2 sudu makan sugar
1/8 sudu teh lada sulah
1 sudu makan active dry yeast

Glaze:
1 biji putih telur
1 sudu makan air

Toppings:
Biji bijan , badam atau garam kasar

Method:
Place ingredients in bread pan in order recommended by manufacturer.  Use dough setting. When setting is complete, remove dough from bread pan. 
Punch down and on a lightly floured surface cut the dough into 16 equal pieces. Roll each piece of dough into a rope about 16" long. Shape each rope into a pretzel. (Cross the ends of the rope to make a loop; twist the crossed ends once and fold across the loop.)  Place the pretzels on a greased baking sheet  1 1/2" apart.   
Brush with combined egg white and water. Sprinkle with sesame or almond or sea salt. Bake in preheated 375 degree (F) oven for 15 to 20 minutes  or until gold brown.
