Chicken with lemon sauce



Ingredients:
8 chicken breast halves, deboned and cut into bite size pieces
1/2 cup cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup water
4 egg yolks, beaten
2 cups Cooking Oil
Green onions, sliced
***Lemon Sauce***
1 1/2 cup water
1/2 cup lemon juice
3 1/2 tablespoons light brown sugar
3 tablespoons cornstarch
3 tablespoons honey
2 teaspoons chicken bouillon granules
1/4 teaspoon ginger, or more if desired

Directions:
Combine cornstarch, salt and pepper. Blend in water and egg yolks. Dip chicken pieces into cornstarch-egg mixture. Fry chicken in oil for about 5 minutes until golden. Drain. Sprinkle with green onions. Pour sauce over chicken.

For the sauce: Combine all the ingredients in a saucepan. Cook over medium heat, stirring, about 5 minutes until sauce boils. Pour over chicken. This recipe also works well in a wok.

Beef Basil Stir-Fry


Ingredients:
  • 2 tbsp vegetable oil
  • 400g beef strips, or steak cut into thin strips 
  • 1 big onion sliced
  • 1 red chilli   , finely sliced
  • 2 tbsp oyster sauce
  • handful basil leaves
Method:
  • Heat a wok or large frying pan until smoking hot. 
  • Pour in the oil and swirl around the pan, then tip in the beef strips and chilli. 
  • Cook, stirring all the time, until the meat is lightly browned, about 3 minutes, then pour over the oyster sauce. Cook until heated through and the sauce coats the meat. Put in the onion stir for a minute.
  • Stir in the basil leaves and serve with plain rice.

Stir-fry Chicken

Ingredients:
3 shallots - bawang merah
3 clove garlic - bawang putih
2 red chillies  - cili merah
4 chicken breasts - isi ayam
green bean or snow bean or french beans - kacang panjang, buncis
1 lemon grass- serai
4 kaffir lime leaves - daun limau purut
2 juice of calamansi  lime - jus air  limau kasturi
1 tbsp fish sauce - sos ikan

Method:
Chop the spring onions. Pound the garlic, lemon grass, shallots. Slice chillies.
Heat the oil in a shallow pan over medium heat, then add the garlic paste until fragrant. 
Add the chicken , chillies and fry until chicken begins to turn brown, then add the beans.
Shred the kaffir leaves, juice the limes and add to the chicken, add fish sauce to taste and  stir as it sizzles. Serve with rice.

Egg Curry


Ingredients:
6 eggs, hard boiled~ duck egg if possible
2 large onions, sliced thin
2 large tomatoes, chopped
3 green chillies, slit lengthwise
½ tsp ginger paste
½ tsp garlic paste
½ tsp turmeric powder
3 cardamom pods
4 cloves
2 small sticks cinnamon
2 bay leaves
4-5 tbsp cooking oil
1 glass thick coconut milk
1 sprig curry leaves
3 tbsp chopped coriander
salt to taste
potatoes -optional


Method: Cut each egg in half. Heat the oil in a pan and place the eggs with cut side face down. Shallow fry the egg halves, gently turning over, till golden brown. Remove from pan and keep aside.
To the remaining oil, add the bay leaves, cardamom, cloves and cinnamon and stir a couple of times. Add the green chillies, stir and now add the sliced onions.  Sauté till soft and golden in colour. Add the ginger and garlic pastes and  sauté  till the oil separates.
Add the turmeric powder, curry leaves and potatoes and allow to cook well.
When done add tomatoes, 2 tbsp coriander leaves, salt and mix.  After awhile add the coconut milk, just bring to a boil and take off the heat immediately. If you allow the curry to boil after adding coconut milk, it will split. The consistency of the coconut milk gravy should be thick and sauce-like rather than watery.


To serve, place the shallow fried egg halves in a serving dish and pour the coconut milk curry over this. Garnish with remaining 1 tbsp coriander leaves.

Serve hot with rice; chapathis; parathas or even roti



Daging Kerisik

Bahan-bahannya:
A
1 kilo daging lembu - potong dadu sebesar 2 inchi (cuci dan tos)

B - di kisar halus
15 btg lada hidup atau lada kering
3 biji bawang besar
4 ulas bawang putih
3 btg serai
1 inchi halia
2 biji buah keras- optional

C
2 inchi lengkuas - ketuk2 sket
1 cwn kerisik
8 sudu kicap manis
1/4 cwn air asam
daun salam (kalau nak laaaaa tak nak takpe)
garam & gula secukupnya




Cara-caranya
Lebur semua bahan2 (kecuali air asam) dlm kuali hingga daging empok sedikit, kemudian masukkan air asam gaul rata dan masak laa hingga kering.
Bila dah kering.. apalagi... ambil nasi panas2 dan makan ler..

Thai Pandan Chicken

 
















                                                            
Ingredients:
600 g diced chicken meat   ~ isi daging ayam
5 cups oil for deep-frying    ~ minyak masak
40-50 pcs big pandan leaves, washed ~ daun pandan                                         
Seasoning:
60 gm shallots, chopped - bawang merah
30 gm garlic, chopped  -   bawang putih
1 tablespoon lemongrass (white part only), chopped~ serai
1 tablespoon coriander roots, chopped ~ akar pokok ketumbar
1 teaspoon peppercorns, pounded ~ lada hitam
1/2 teaspoon salt ~ garam
2 tablespoons sauce fish  ~ sos ikan
1 teaspoon sugar  ~ gula
1 teaspoon turmeric powder - sebuk kunyit
2 tablespoons honey ~ madu
1 teaspoon black soy sauce ~ kicap pekat
                                                          
Method:
Marinate diced chicken meat with seasoning for 2-3 hours. Wrap up chicken meat neatly with pandan leaves (refer below). Heat up the oil for deep-frying, deep-fry the chicken till golden brown. Dish and drain. Serve hot and let the guests unwrap them and enjoy the aroma and flavor.


Note*
Pandan chicken can also be wrapped and keep in the fridge. Deep-fry in hot oil before serving. It can also be baked for more healthy way of cooking.

Kentang Berempah

Spicy potatoes are a great dish to serve for appetizer, snack or side dish.

Bahan Yang Perlu:
3 biji kentang merah sederhana besar
2 sudu makan minyak masak
1/2 sudu teh jintan putih
1 sudu teh ketumbar ditumbuk
1 sudu teh jintah manis ditumbuk
½ sudu halba
1st halia dihiris
1 sudu teh serbuk lada hitam
4 cili hijau potong serong
1 sudu teh garam
2 sudu teh fresh lemon juice
2 sudu makan daun ketumbar

Method:
Peel off some skin in stripes from the potatoes; leave some of the skin to provide color.
Cut the potatoes into bite size cubes.
In a pot, boil about four cups of water; add one teaspoon of salt and the cubed potatoes. make sure there is enough water in pot so potatoes are soaked. Boil the potatoes till they are tender but not mushy.
After potatoes are cooked, drain the water and set aside.
Heat the oil in a frying pan on medium high heat. Test the heat by adding one cumin seed to the oil; if it cracks right away oil is ready.
Add cumin seed, and as cumin seeds crack add coriander, fennel seed, fenugreek seed and shredded ginger, stir fry for half a minute.
Add potatoes and Stir-fry on medium high heat till they are light golden brown.
Add salt, black pepper and green chili and roast another two to three minutes. Turn off the heat and add lemon juice and cilantro and mix. Serve hot.   Adjust salt, lemon, and pepper to your taste.

Udang Goreng Rangup

Bahan:
500 gm udang, kupas kulitnya, tinggalkan ekor  
 
Satukan:
1/2 sudu makan lada hitam
jus air limau
sos ikan
Sadur:
tepung jagung secukupnya
bread crumb secukupnya
1 biji telur
Cara membuat:
Perap udang dalam bahan yang dicampur 20 minit.
Sejat udang.  Kemudian gaul udang dalam tepung jagung.
Kemudian celup dalam telur yang telah dipukul ringan.
Kemudian balik-balik dalam serbuk roti, tekan-tekan sedikit.
Simpan beberapa minit dalam peti sejuk.
Goreng sampai garing. Hidangkan panas bersama sos cili.

Beef Ginger

A chinese dish the use of soya sauce and sesame oil are essential


Bahan Yang Perlu:
500gm beef (rouladen)
1 batang celery
1 batang karot
5 cili padi
2 sudu makan halia, cincang
2 ulas bawang putih, cincang
1 sudu teh minyak bijan

Perap:
2 sudu makan kicp pekat
1 biji kuib daging
1 sudu teh gula
2 sudu makan jus halia

1 putih telur – pukul ringan
1/4 cawan air
1/4 cawan tepung
1/4 cawan tepung jagung

Sos:
¼ cawan air rebusan tulang
2 sudu makan kicap cair
1 sudu makan gula perang atau madu jika suka
1/2 sudu teh minyak bijan
1 sudu makan cili giling
Directions:
Cut beef into matchstick strips, cutting along the grain. (The meat is easier to cut if it is partially frozen).

To make ginger juice for marinade: peel and grate ginger. Squeeze out juice.

Mix four marinade ingredients. Add to beef and marinate for 30 minutes.

Begin preparing vegetables. Cut carrots, celery, and pepper into thin strips. Mince garlic. For ginger, use the leftover minced ginger from the preparation of ginger juice.

Mix the sauce ingredients. Set aside.

Beat the egg white and add water. Add flour and cornstarch. Mix the batter thoroughly. Drop the batter into the marinated meat.

Heat wok. When heated, add 4 - 5 cups of oil. When the oil is ready, add about 1/4 of the meat/batter mixture. Deep-fry the beef until golden brown. Remove and set aside. Let oil come back to original temperature and add more meat.

When meat is cooked, clean the wok. Heat and add 1 tablespoon oil. When oil is ready, add the vegetables and begin stir-frying. Pour in the sauce and let come to a boil. Add the deep-fried beef. Toss quickly, and remove.

Sprinkle with sesame seed and sesame oil and serve hot.

Spicy Potatoes

Bahan Yang Perlu:
6 biji kentang merah potong dadu
2 teaspoon chili powder
½ sudu teh lada hitam umbuk kasar
1 sudu teh garam
1 sudu teh serbuk bawang putih
1 sudu teh serbuk jintan putih
2 tablespoons olive oil


Preparation:
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and spread on a baking sheet.
In a small bowl, or cup, combine chili powder, salt, garlic powder and cumin.
Drizzle potatoes with oil and sprinkle with spice mixture.
Bake in preheated oven for 40 minutes, or until crisp, turning every 10 minutes.

Ayam Masak Cabai Hijau

yang mudah dibuat,  boleh masukkan santan kalau nak.   
 Bahan-Bahan:
500gm ayam potong sesuai selera
garam, kunyit

Bahan Tumbuk:
1 biji bawang besar
6 ulas bawang putih
1 batang serai 
       
10 biji cili hijau tumbuk kasar
3 helai daun limau purut
jus limau kasturi~ ikut citarasa
tomato- ikut suka
sedikit garam, gula


Cara memasaknya:
Lumur ayam dengan kunyit dan garam, perap selama 30 minit baru digoreng.

Ambil minyak bekas menggoreng ayam secukupnya tumis 
bahan tumbuk sampai nak bau jangan sampai garing, masuk sedikit air, daun limau purut, garam, gula, jus limau dan cili hijau, kacau sampai bumbu masak masukkan tomato, kecilkan api.
Masukkan ayam goreng, kacau rata.  Siap untuk dihidangkan.

Salad Daging Ala Thai

200gm daging rebus
2 batang daun ketumbar cincang
2 batang daun bawang potong serong
2 ulas bawang putih cincang
1 biji cili bengala merah - hiris
Air limau nipis
sos ikan
gula
kacang tanah goring- tumbuk kasar
4 biji cili padi, hiris halus


Cara-Caranya:
In a bowl, combine the chilli, garlic, sugar, lime juice and fish sauce. Mix until the sugar has dissolved, and leave the flavours to mingle for 15 minutes. Slice whatever beef you're using into strips, and add this to the bowl. In goes the spring onion, and coriander. Toss well to make sure all the ingredients get a coating in the dressing, and then place on a plate. Garnish with the peanuts.

Kari Ikan Goan

Bahan Yang Perlu:
800 gm ikan bawal potong memanjang dan
lumur dengan kunyit dan garam selepas 5 mint
cuci bersih.
1 biji tomato cincang
6 biji cili hijau1 cawan santan

1 sudu makan minyak masak
1 cawan air

  



Untuk kuah:
1 biji bawang besar saiz sederhana
6 biji cili kering
2 sudu makan kumbar biji atau serbuk
1 sudu teh jintan putih
1 inci halia
4 ulas bawang putih
1 sudu makan pes asam jawa
1 sudu teh serbuk kunyit
Giling semua di atas hingga halus. 


Cara Memasaknya:
Panaskan minyak dan tumis bahan kuah sehingga naik minyak.
Masukkan tomato sehingga keluar air, masuk santan dan air didihkan.
Masuk ikan, cili hijau dan garam. Masak hingga ikan cukup masak dan
kuah mendidih.

Hot Spicy Shrimp

This dish is to be eaten spicy hot, If your taste buds are not used to the fiery heat, then by all means feel free to adjust the seasonings to your personal preference. Pedas lagi sedap, .cuba kalau nak tau.





Ingredients:
500 gm udang (peeled, de-veined, tail-on) 4 biji bawang merah , thinly sliced 3 ullas bawang putih , finely minced 5 cili padi, slit in half lengthwise, to taste

2 each cili merah & hijau, slice thinly
1 inci halia, peeled and finely minced
1 sudu makan pes asam jawa
1 biji tomato sedang, finely diced
1 sudu makan serbuk ketumbar

1 sudu teh serbuk jintan putih
1 sudu teh serbuk kunyit
garam & lada hitam, to taste
½ biji jus limau nipis
1 ikat kuci

2 tangkai daum kesum
Minyak masak
Beberapa tiitik minyak bijan (optional)

METHOD:
If you are using shrimp, scallops or seafood: wash, trim and prepare the seafood as needed. Sprinkle with a little salt & pepper, set aside until necessary. If you are using vegetables: wash, trim and prepare the veggies as needed. Sprinkle with a little salt & pepper, set aside until necessary.


In a large deep wok on high heat add a tbsp or so of the oil. When hot, quickly sear the shrimp on both sides for just a minute or two until lightly browned. They don’t need to be fully cooked at this point, just flash fried. This may need to be done in batches, set aside until needed.

Now reduce the heat to medium high and add a little oil to the wok if needed. Add the shallots, ginger, garlic and chillies. Stir fry for a few minutes until fragrant and aromatic. Next, add the spices (salt, pepper, ground cumin, ground coriander, turmeric). Stir fry for a few minutes, allowing the spices to cook and lose their “raw” taste. Now, add the tomatoes and tamarind (either paste, concentrate or powder). Stir fry and let cook for 4-5 minutes. This dish is not really a curry, it is more like a stir fry but if you prefer a little sauce --- feel free to add a cup or so of water (you can also use stock if you have it on hand).

At this point, you can return the shrimp (or whatever seafood or vegetables of your choosing) to the wok. Stir fry for a few more minutes and then finish the dish by adding the lime juice, toasted sesame oil and the herbs (basil & chives). Stir to combine all of the ingredients and transfer to a serving dish. Garnish with freshly chopped cilantro leaves and serve with rice.
